I started my career as a chef many years ago, and food has always played a crucial role, especially on an emotional level. I learned to understand food, to express myself through it, and to share the most intimate part of myself with colors and flavors. Through these, I opened my heart to a new culture, far from home, giving me the opportunity to find a new home, a new community, and a sense of belonging to a different world.
And so, since the connection with food is regeneration (or vice versa), today I am here to share this with you. This is, to this day, my mantra.

It is through food that we can experience true renewal. Food is not just physical nourishment, but an act of care and connection. Every shared dish, every chosen ingredient, every moment at the table and beyond, is an opportunity for deep connection, both with others and with ourselves.

Healing is not just a process of repair, but an act of creation and care through food.
It is in simple yet profound gestures, like sharing a meal, that we regenerate, restore ourselves, and flourish. In food, we find the strength to regenerate, grow, and nourish our bonds with others.
So, there is no better choice than to return to our roots, to the concept of cucina povera, and thus to the Mediterranean diet. We must be inspired by the fact that creating something delicious by combining a few seasonal ingredients will lead us to surprising results.

Cucina povera was born out of necessity, from a scarcity of choices, using available products based on the season: unrefined flours, a minimal amount of meat, vegetables from their own farms, and only olive oil, if lucky. Everything was recycled, with no waste.

We have lost all of this with the consumerist culture, and because of that, we have also lost our respect for the planet. Everything is accessible anytime, anywhere. There is no distinction between holidays and … days. There is no meaningful or intentional choice.
For all these reasons, we should return to the origins: Where we learned to be grateful for what we have.
Re-educating our palates to simple, clean flavors—how can we become less addicted to sugar and all the refined and preserved products.
As a chef, my career has been a constant challenge of creativity, striving to create dishesthat make customers fall in love with what we prepare. When people dine out, they expect rich, flavorful food. But through education, we teach that true satisfaction often comes from the simplicity and purity of honest ingredients.
This is exactly what I want to teach now, and I’ve found the best place to do it.

We are planning special trips to Italy for a complete enogastronomical journey, combining learning with doctors and chefs. We will stay in the places where our sources originate, allowing us to fully experience the culture and traditions.
